How late can interviews go, and is it possible to Skype them or use some kind of video chat for the interview?

No I don't think that there are any schools that allow for Skype or phone interviews. Interviews can go as late as March-April, but I think most of the interviews given at that point are for the alternate list. It really is school dependant, though, some schools get all of their interviews in before Dec. (OSU and UNC, for example). You can look at the schools individual websites and they may give you an approximate date range for when they conduct interviews.
