Is an LOR from a math professor acceptable for non-science?

There is mathematical sciences which is science, and which is why mathematicians are scientists, and there are nonscientific maths. So it depends, some will say yes it is others will say no. I don't really know enough to give a definite answer though sorry 😛
 
according to AAMC, your science GPA is made up of BCPM which is biology, chemistry, physics, math so you tell me if math is "non science".

In all your coursework, did you have any courses in English, foreign language, philosophy, theology/religious study, art history,music appreciation, studio art (e.g. photography, drawing, painting, sculpting, ceramics, basketweaving), the performing arts (theater, drama, dance, band, voice), film studies, history, political science, psychology, sociology, anthropology, economics, physical education?

Several schools consider science LOR's to be limited to "biology, chemistry, or physics". I did have those courses but didn't have much interaction with the professor.
 
So I guess the bottom line is that it varies school to school
 
Yes I think it varies from school to school. I had a committee letter plus a math letter which I sent to schools and haven't had a problem. (Though looking back now, I honestly think the math letter was excessive.)
