I just noticed that some schools have a limit on # of LORs but I've already assigned all my schools a committee packet (3 letters and committee letter) +3 additional LORs. will this hurt me?

They may not read all of them. But yes, there is a thing as too many LORs. Pick your best and stick with those.

Generally 6 is the upper limit, in my experience, so you should be fine most places.

As above, worst case scenario is that they just start ignoring some of them - it doesn't reflect badly on you.
