I'm currently working as a CNA at a skilled nursing facility and often accompany patients to doctor's appointments in specialties ranging from ophthalmology to orthopedics. I've built solid relationships with a lot of the doctors I see most frequently and am curious as to whether this could reasonably considered shadowing experience?

I would say no. You were there working as the patient's caregiver / assistant. Your role is closer to that of a family member, friend, or in-person translator; all of which are important / impactful, but would not qualify as shadowing. List this as paid clinical experience, and be sure to mention any insights gained during your encounters accompanying folks to their visits. Get formal shadowing hours as @candbgirl suggested. Thanks for your work, I'm always more relieved when my patients are accompanied by someone.
