I have one letter with a PI Who I also took a science letter with.

In another letter from my SMP program director, I reached out to two science professors and had their two quotes incorporated into two separate paragraphs within the program letter.

Is this sufficient for science letters?
You'll need to better explain. Who is writing what? I assume med? Did you ask for any school specific letter requirements?

It really is school dependent. If they state a committee letter is enough then that should be enough and you can add the additional letter since it seems you have a strong relationship with your PI both from a research and academic side.

I basically have a committee letter from my SMP directly quoting two of my Science professors over the span of 2 paragraphs. My Science Professors signed my committee letter at the bottom.

In addition to that SMP Committee Letter, I also have an Undergraduate PI who I've worked with in both a research capacity and I took a science class on biomechanics with them.

With this combination of these two letters and 3 other LORs that span an internship, research, extracurriculars and volunteering will this be a good distribution of letters?

Apologies if I wasn't too specific before and thanks for your time!!
At the end of the day you just need strong letters from people who know you well. If your PI can also speak to your ability as a student then that’s fine. This “program letter,” again it ultimately comes down to how well these profs know you and how well you did in the program overall
