I've been complete at all the schools I applied to since around mid July but I haven't heard back from too many. About a month ago I was listed as an author on a submitted manuscript, but it hasn't been accepted for publication yet. Should I update schools about this kind of thing or will they not care unless it's in press. If anything I would hope it would show that I haven't just been sitting on my hands all day since graduating lol

No. Wait until it's accepted. Otherwise you don't have anything. (I could write a title on my Costco receipt and submit that, but it probably wouldn't be published.) (Except in one of those super-sub-specialized journals.)

This manuscript may need to be resubmitted to several journals before it's accepted, or may require major revisions. No credit for a submitted manuscript accrues until it's accepted, and you can prove it. So wait.

Meanwhile, for those schools open to updates, besides a statement of continued interest in their program, consider including a summery of fall grades, if excellent, and/or a report of Total Hours added since primary submission of pertinent ECs, like community service and clinical involvement, particularly if they were on the scanty side to start with.

Sounds like good advice. I've waited this long, so waiting longer doesn't seem too bad! It's probably more neuroticism on my part that's kind of giving me the feeling like I need to update with something lol. Thanks for the help!
