As a current K-State undergrad who's already had her interview, I'd figure I'd pop in and talk about both that and Manhattan.
Before the interview (at least for IS), we had our pictures taken. These will go up on the class of 2013's website and be on the rosters, I believe. (I look terrified in mine, but oh well.)
The interview itself is really laid back. Interviews are with two faculty/staff of the veterinary college and one practicing veterinarian. I had a beef cattle vet, a small animal surgery faculty member and an internal medicine specialist as my interviewers. I re-read my application and about some issues in the industry the morning of. I was asked a lot of questions relating to my classes, especially my international trade classes and foreign language classes. I wasn't asked any medical questions, but that probably varies by applicant. Basically, if it makes you stand out on the application paper, they'll ask you about it, along with the standard ethics and "tell us about yourself" stuff.
Also, I heard this from all of the members of the class of 2012 I met and several of the veterinarians I work with (and you might have too): do not say the reason you want to be a vet is just because you love animals. Or hate people.
Response usually takes about 2-2.5 weeks from what I've been told, and is via snail mail. After the interview, you can go on a tour of the facilities and mess around with the tablet computer the class of 2013 will be getting. I also recommend taking a pen and some postcards if they have them out.
As for Manhattan, it's not the biggest town, but it's not the smallest. The closest hotel to the campus is the Radisson on Anderson Avenue. I've been there for banquets, and it seems pretty nice though I can't speak for the rooms. Unfortunately, it's located on the south side of the main campus, while the vet school is farther north, near the football stadium. So, bring a car or comfortable walking shoes and proper winter wear (at least for that day...Kansas is notorious for unpredictable weather.)
