Are ALL the topics on the DAT covered in the Kaplan blue book? How good is this book at teaching you ALL you need to know?

Yes, the Kaplan blue book does cover all the sections you need to know for the DAT, but you may want to supplement it with some other materials. I suggest the Schaum's outlines of biology, Chemistry, and Organic chemistry for more help with the sciences and Barron's DAT book for additional help with the PAT section. I would also for sure get Top Score Pro for some more accurate full length practice exams.

If you are willing to spend a little more you may also want to consider taking the Kaplan DAT class or DAT Destroyer.
