I just bought the Kaplan 7 book series. A professor of mine told me there is a certain "recipe" for using Kaplan. I've searched for this strategy but I can't find it. Am I missing something? Also, I was told to start by taking an exam to know where you stand and where to start. Is this good advice? I saw there are small tests for each section. Should I take those or a FL?

There's no specific recipe. You can take a preliminary FL to see where you're at before starting to study. The "tests" at the end of each chapter are designed only to gauge your content recall of the information contained in those chapters - those questions are not representative of actual MCAT questions at all.

They're pretty similar so you can choose any of them you want. Or you can go online and find free "diagnostic" exams that you can take. Steer clear of the TPR one though.
