There are several activities listed on my AMCAS as -Present including volunteering, working, and research. With classes beginning and interviews around the corner, I'm starting to worry about not having time for most of my ECs. For financial reasons I was hoping to be able to spend most of my free time working to earn some spending money.

Do most people keep up with all of their ECs during the interview season? Do adcoms care if you stop volunteering or researching until interviews are done? I am assuming that interviewers will ask what ECs you're currently participating in.

Try to keep up? That way you'll be fresh for questions and have backup things to do.
I'm having the same problem. It seems like I'll be missing my volunteer shift like every other week and putting in a miniscule amount of hours at my lab for spending money. All we can do is try to keep up and stay involved, so I'm sure a lot of EC coordinating people will understand. But if it was cutting into your grades, I would drop.

somehow i went up on the number of activities i had. a lesson from job interviews that i took home is to not appear like a bum and speaking in present tense > past tense

Keep up the activities, even if you are not able to give as much time. You'll need to do so for interviews, to have relevant data for update letters, and in case you don't get in this season, you need a good answer to the question, "What have you done to improve your application since you last applied?" Also, I just found out that one is able to list the most significant activities on the residency application, especially the research.
