Hi one of my lor writers has switched jobs since I worked with him and cannot include a letterhead for his lor. How big of an issue is this?

It needs to be on the letterhead of whatever group/organization/institution he works with now, referencing within the letter the context in which he worked with you.

Thanks for your reply. His boss at his new job is being difficult and has refused to let him use the letterhead because my work with him didn't take place at the new institution. Should I just not use his letter?

That's dumb. If you can't get a letter on some sort of official letterhead, you can't get a letter.
