Are the letters of evaluation requirements pretty strict for the schools? For example, if it asks for 2 science professors that I have studied with, can I submit a letter from a professor I took a class with and a professor I do research with (but have taken a class with)? My PI does research in the dental school and can write me a much stronger letter than another science professor who taught me in a class of 300.

You're going to have to call the schools you're interested in and find out. It's a school by school basis.
