Letters of recommendation

First question:
I noticed a lot of schools need slightly different letters of rec (from different people). Should I just upload all the different ones. So if one school asks for 1 science letter while another asks for 2 then the best thing to do would be to upload 2 even though that one school asked for one (FOR EXAMPLE).

Which means I could end up uploading 5 or so recs, 2 science, 1 dentist I shadowed, 1 work, 1 research lab professor. I always thought submitting too many letters of rec may look bad to some dental schools though? They see it as overkill or something? Although I would be doing it to satisfy the requirements of the various dental schools I'm applying to.

Second question:
My school has a letter reference service which means I did not ask my letter-writers to submit their letters through AADSAS directly but rather I asked them to write a letter for my application to dental school that was submitted to the letter reference service. This means they did not get the question sheet or instructions or whatever it is they get when I submit their name/email through AADSAS. Is this going to be a problem? The plan was to submit the letters from the letter service to AADSAS but I don't know what additional information (if any) they would need.
