Listing various shadow experiences

I have various small (less than 20 hrs) shadowing experiences with different specialties , and am not sure how/if to list them as one of the 15 activities. I have other accomplishments/activities that I have devoted many more hours to, but I know shadowing is emphasized by many schools. Thoughts?

maybe list "physician shadowing" as an activity and then under the description put all the details about specific hours with specific physician.

That is exactly what I did. Just list the name, date, hours, etc. for each experience under the general heading of "Physician Shadowing". I would definitely include it if I were you.
