There's a LaQuinta Inn at the Superstition Springs Mall exit, which is very close to the school (you can see the school as you ready to exit the 60). There's lots of food, etc. around there, so you will have everything you will need in preparation for your interview.
I also recommend you rent a car. Due to the distance from the airport, shuttles or taxi will cost quite a bit. If you time it correctly, you should be able to only use one day of rental and get everything done. You will be out of your interview by lunchtime.
