LOI or no?

So I applied to this one school that I really want that is actually an in-state school. I have above gpa and 2 below MCAT. My application is pretty solid all-around besides the MCAT. Unfortunately, I have not heard back (no invite, but no rejection). Since my application, I have recently done 2 activities that help with clinical hours and leadership. Should I send a letter of interest to the school including these activities or is it worthless? Thanks for your help!

Also, I plan on re-taking the MCAT in March. Has anyone ever heard of a school putting you on a waitlist till that long and hopefully see an increase in my score? Thanks!

Schools won't accept your MCAT retake.

An update letter, if those activities are substantial, is useful, and reexpressing your interest doesn't hurt.
