You will be fine, but i'd take an extra class to get the sGPA above a 3.0 so no auto-screen keeps your application from being read.

When do you think would be the best time to do this? I want to get my application in early (preferably as soon as AMCAS allows me to) but I know if I take the class in the summer it will take time for AMCAS to get the transcript and process the grade..

The sooner the better, but if you can't, you can't.
