I'm applying this upcoming cycle and I'm in the process of gathering LoR from professors.

Some professors say that they won't be able to write specific examples of volunteering, research, leadership, etc. and only write about my class performance, office hour, etc. Is this usual for everyone? Or should I find a prof who is willing to accept my CV and write a good LoR?

Interesting, talk about flexibility.

I suggest either you find a new professor, or if you can't find another professor, then settle with this professor. But then seek out dentists or volunteer leaders to emphasize your volunteer and leadership skill instead. If you're doing research, then your research professor should be able to write you a LoR relating to your research skill.
Example, for me, my 4 LoR's focuses on: 1. characteristics/personalities to become a good dentist from a DS, 2. academic ability to complete dental education from my professor, 3. human interaction skills from my employee, and 4. volunteer experiences from volunteer leader.

Hope it helps and sorry to hear that. :/

That's not really the end of the world. You basically copy and paste your resume into AADSAS so the admissions officer doesn't need to read about those things more than once. If you can get a strong letter about your work ethic, compassion towards others, etc that would be much better than a letter that just talks about your activities. The professor should still accept your CV. If they won't do that then skip them because they obviously don't want to put much effort into getting to know you/writing about you.

What you want is a prof who is good at writing fiction.
