LORs for application 2-3 years down the road

I'm graduating this year and am intending to take 2-3 years off between getting my bachelor's and applying for med school due to various reasons. I was wondering if the 2 science faculty, 1 non-science faculty LOR standard for most schools still applied for me given my at least 2 year gap of not seeing these professors at all. If it still does apply for me, then is it all right for me to start asking potential LOR writers now, and then just keep reminding them every few months or so? Thanks in advance for any help you could give me.
