I've requested LORs from one science professor, one non-science professor, my PI (I did research for credit for 3 semesters), and a physician that I shadowed last summer. I'll also be getting a committee letter. Am I set or do I need another science professor? I'd rather not because I know it won't be as strong as the others...

You need to check with each school that you are applying to, in order to determine if you will meet their LOR requirements. Having said that, each school that I am applying to, accepts a committee letter, and only cares about the number of science prof lor's if you do not have a committee letter. By that standard, you would be fine, as is.
