I'm thinking about taking a 100-level math class teaching some applications of math (some financial math, voting theory, etc.) that is aimed at non-science majors. I have placed out of 200-level classes with AP credit and I am a biology major. Is this frowned upon?

Why would you take 100-level math if you placed into 200 level? Seems lame. Many schools require or "recommend" at least one semester of calculus (which may indirectly help your performance in Physics as well). Why not satisfy the credit AND put a gold star on your app (vs risking a question mark)?

Stats + cal 1= 1 year math requirement for most med schools. A couple of schools want cal 2.

Stats and college level algebra are all you need.

I took Calc 1, Calc 2, Calc 3, Diff eq, Linear Alg, Stats, and then my junior year I took MAT119 (Finite Mathematics).

I doubt it will be frowned upon if you have a strong mathematics background. Will they even see that you tested into 200 level math? No. So I don't think it will hurt you.

I have credit for calculus I and II so I don't need to take this. This is an applications-oriented class directed at non-science majors that is below the calculus level. Will this class be scrutinized?

Will this class be scrutinized? My schedule is otherwise fairly difficult with honors orgo I, cell & developmental bio, and analytical chemistry lab. I just want to bring my sciGPA up.

The chances are very, very small they will notice or care.

If they do notice it will come up in the interview, if anything. Just mention you had a genuine interest in the subject and wanted to take it as one of your elective courses.

Of course, if you say you took it to boost your sGPA, well:
