MCAT - after what prereqs should I take the mcat?

Take the classes you need, don't take the mcat until your practice test scores are in the range you want, and don't take it before you have a clear timeline for applications. It is not a try it for practice thing. Ideally the first time you take the mcat is your last time taking the mcat.
 
General Chemistry I & II
Biology I & II
Organic Chemistry I & II
Physics I & II
Biochemistry
Intro Psychology

Aside from those, intro anatomy and/or physiology give you a foundation in the human body, which many MCAT passages/questions are geared towards. Upper level psychology and sociology courses wouldn't hurt either, but the Psyc/Soc section is easy to self-teach and maneuver once you've got the basics down.

Also, make sure you're taking practice tests to gauge your readiness. Don't just assume having done the prereqs guarantees a decent score. I've seen many fall prey to that mindset.
 
Once I'm done with those two courses I'll plan to begin a test prep course. Are Kaplan and Princeton still the best?

It all depends on you. A lot of people set up their own study plans and don't use a prep course at all. Personally I used Kaplan. I didn't find the class overly useful aside from it giving me very clear topics to study and when to study them. It helped me to have that organization. You might not.
 
I thrive under direct guidance. I'd love to save the money if I can find help here on SDN .

Gen Bio
Gen Chem
Physics
O-Chem
Biochem (1 semester)

I would do all 5 of these as you need them anyways and that's the best way to learn them.

Psych and Soc are 100% optional. Never took a psych class in my life and scored upper 90s percentile. Took a sociology class and there was almost no overlap with MCAT sociology.

A simple review book for the psych/soc is my recommendation even with no background, however I wouldn't take the MCAT until all hard sciences are taken in class. (You may be able to skim by without Ochem 2 since there are so few Ochem questions overall and few 2nd semester topics)
