That's not such a good plan, because the AMCAS primary application for Fall 2019 starts in early June, 2018. You ideally want to apply sometime in June to maximize your chances. Taking an August MCAT means that your score won't be available until September (about 30 days after your exam date). Many schools will not review your application until it is complete (has an MCAT score), so it will sit dormant while other applicants are being reviewed, sent secondaries, and offered interviews.

Is there any way you could take the MCAT this May?
 
Taking it in early June should be okay in terms of timing. You can submit your AMCAS application prior to getting your MCAT score, it'll just be a bit of an uncertainty in terms of knowing your full profile and choosing schools appropriately. The good news is that you can apply to just a couple schools (ones you plan to apply to no what score you get) and then you can add more schools later, once you know your MCAT score.

So while it is still optimal to have a complete application in early June, you can take the MCAT in early June, submit your primary application shortly after your MCAT date, and then add additional schools to your primary application on the day you receive your scores.

This is the real question isn't it?

And I think the REAL question that needs to be answered is why are you waiting until the last possible moment to take it? Have you considered the possible ramifications of this approach?
