MCAT conversion question? Scaled and equated?

I went on the AAMC website too see how the MCAT exam is actually graded, and it ended up confusing me more. So I have two questions if anyone could please elaborate

1) I always thought it was on a percentile basis too account for different exams, However the website is adamant that you are not ranked up against the peers you take the exam with. However how does AAMC actually account for different unwanted variations in difficulty of exams?

2) How does the MCAT cycle work? Does everyone in August take the same exam, Everyone in June take the same exam, etc. Or is it every single test date takes a completely different exam?

It is percentile based, but you're placed on a curve against a historical cohort of all the people taking it previously in recent years to assign that percentile. You aren't compared at all against the other students next to you on exam day.

They mix and match passages between test dates. You saw some of the same questions as people who took it a month before you, but also many different.
