Depends when you're going to take it. Start prepping 3-5 months in advance. In my opinion, the best way to prep for the MCAT before the fact would be to nail bio/chem/organic/physics when you take them. I took bio/chem freshman year and didn't put a lot of effort into that year. I took organic/physics sophomore year and put plenty of effort into it. The relative ease of reviewing organic/physics to chem/bio (especially bio) is amazing. I'm sure it also helps I took organic/physics more recently though.
 
Do all the problems at the end of chapters in your physics, chem, etc. subjects related to mcat with intentions of seeing something similar on the mcat. Be a pro at doing simple math relatively quickly and making approximations. So, in essence, you are killing two birds with one stone if you are smart about learning the dynamics of problem solving and the material the first time when you see it.
 
Beginning of sophomore year is too early, it is better to wait at least until the summer between your sophomore and junior year.
