Which ones are there? Tried searching but couldn't find an up to date list

Dartmouth for one. Many people are doing the optional portion, though

Oklahoma just has biographic checkboxes. Probably not worth the app fee though if your OOS without strong ties

New York Med didn't have one when I applied forever ago... this could have changed by now though.

Just go click through the 2017-2018 school specific threads. The first post in each thread will be by a moderator and list all the secondary prompts. You could find every place with a minimal secondary in like 15-20 minutes!
 
St. Louis Univ and WASHU only had two optional essays each, although they may be "optional"
 
Rochester will surprise you with essays once you get an II
But I think at that point people are generally ok with it and just ecstatic to have an II
