I understand that bloody diarrhea means the organism is invasive & watery diarrhea means the organism is non-invasive causing electrolyte and water imbalance in the intestine e.g. cholera by increasing cAMP.

Can someone please explain what does diarrhea with "mucus" mean? And what's the mechanism behind mucus production in diarrhea.
Also which organisms cause mucus-filled diarrhea? Shigella, entamoeba, any other?

Mucus is normally produced in the gut and acts as the first line of defense.
However, increased mucus production is a sign of inflammation and could be associated with presence of leukocytes on stool smear depending on the etiology.
It could be due to infectious (e.g. shigella, salmonella, campylobacter, yersinia or EH ) or non-infectious causes (Crohn's, UC, hemorrhoids).
It is usually (not always) followed by blood in stool if the condition remains untreated.
