For my most meaningful experience is it okay if I have one that centers around being a clinical researcher, one where I worked in a pro-bono consulting org and did stuff like launch a free clinic/consulted for other community organizations, and one where I was a volunteer/ran a project at a family practice? I know it's not super well-rounded, but I feel that expanding on them gives me the opportunity to show cool stories, albiet each impacting the medical field somewhat. I do have other stuff on my app that highlights things I did outside medicine.

As long as you're able to sufficiently explain why those particular experiences were meaningful to you, it shouldn't be a problem. Just make sure to have non-medical experiences listed as well to highlight interests in fields outside of medicine. More often than not, interviewers will ask you about your non-medical interests, so make sure you can adequately discuss these fields as well if needed.
