I dont know how likely these are to show on the DAT but it is in Destroyer so I want to get it right. I understand number the bridgehead carbons but when indicating the carbons between why do we indicate the first bridgehead. Example is number 43 in 2014 destroyer. And do you always go in descending order aka 3:2:1?

The numbers are always written in descending order as per the IUPAC rules. The numbers in the brackets indicate the number of carbons between the bridgehead carbons. There must be 3 of them. Look at all 3 paths

If you have the McMurray or Wade book they give good examples.
