Need Guidance regarding my chances and next steps

Junior Student at UC San Diego. My BPCM GPA = 3.5 and General GPA = 3.5. My activities list:
a. 120 hours volunteering at VA hospital
b. 8 weeks - Internship at Livermore Labs - not relate to healthcare -
c. Targeting 120 hours Internship at Bioinformatics startup (scheduled to start Jan 2018)

Here are few questions if people on the forum can guide me:

1. When should I take MCAT if I want to start college in 2020?
2. Are the Extracurricular Activities on target or sufficient enough?
3. Is my GPA on target for giving me 75% chance to at least 10-15 schools in US?
4. If GPA not giving me chance as desired, what should be my MCAT target to compensate for?
5. How many LOR should I get? Can this LOR be from my internship or volunteering contacts?
6. Is there anything else I should consider to increase my chances to MD/DO schools?

You need 50 hours of physician shadowing (including primary care). Take the MCAT when your practice scores are at least 508 if you want to go to a MD school. 500 would be adequate for some DO schools. Take the MCAT no later than May 2019. If you increase your GPA's to 3.6 then you have a 75% chance for a MD acceptance with a MCAT in the 514 to 517 range.
