I'm curious if schools that interview you require you to bring in updated transcripts if you are applying during your senior year of college. Or if they require some GPA minimum to enter the school after admittance?

No you do not and never have to update schools during the process. It may be a good idea if you do well your first semester. After you are accepted you do have to pass your classes and expected to get your degree.
