The only person that can answer this question is you and I caution you from looking for a specific answer from anyone on SDN or the internet, including me. There are plenty of students that have taken on more than that in a semester and did very well. But, this isn't about them, this is about you and your GPA.
#1 Talk to students ahead of you at your school. Find out what orgo 2 is like compared to orgo 1 (which I assume you are currently taking).
#2 Think about your current course load with orgo 1. Add/subtract what people at your school think about orgo 2 compared to orgo 1.
There is such a thing as playing things too safe. You can't put your life or education on hold because of medical school ambitions. That isn't a license to make stupid mistakes, but you shouldn't be afraid of working hard if that is what it takes to do well. But this pretty much entirely hinges on you and your academic prowess.
