Non trad school list help

Hi all,
I recently got my MCAT score back and wondering what you think of my current list.

1. cGPA: 3.42 sGPA: 3.31. Currently have a 4.0 in my DIY post bacc.
2. MCAT score(s) and breakdown: 519 (132,127,130,130)
3. State of residence: Colorado
4. Ethnicity: white
5. Top 50 research institution, majored in Chemical Engineering
6. Clinical experience: currently working full time as an EMT
7. Research experience: material science lab (400+ hours) -- poster and professional society presentations
8. Shadowing experience: None. Worried about this. Going to reach out to some of my doctors growing up this week to see if they're currently allowing pre-meds to shadow.
9. Other volunteering: Previously a health educator in the Peace Corps, currently working weekly at local food bank
10. Other extracurricular activities: Started an international development club, cycling team president & captain
11. Relevant honors or awards: Chemical Engineering Student of the Year

LSU and Kansas accept very few non residents with your GPA and no connection to the state. I suggest adding these schools:
