Non-traditional newbie who did not major in psych

If I take the pre-reqs in the fall, and apply on the Dec. 20 deadline (but still don't have the final grades yet), can I still apply? Will programs even look at my application if they have to wait a bit for me to send them my transcript? Or do they request transcripts themselves? I would imagine transcripts would be ready with final grades around min-January. Would this be too late?

You can still apply, although some schools may not look at your application if you don't have at least SOME psych grades on your transcript. Waiting until January to send them the transcript will definitely work against your application.

You have to order the transcripts yourself and mail them to schools.

Another question.....

I was thinking if I could take two pre-req classes over the summer then I'd at least have two classes on a transcript to submit by the Dec. deadline. If I took one psych course each summer session this summer=two psych courses during summer school, do I have to take stats first? Are stats a part of all psych classes? For instance, if I was to take abnormal psych and social psych this summer and stats in the fall, would I be at a huge disadvantage because I wouldn't know any stats for the two summer classes? Will PhD programs frown on my cramming in two psych classes for pre-reqs over the summer session (I know that summer sessions tend to be less rigorous than the regular semester b/c I took some post-bacc classes over the summer like chemistry).

Also, what kind of evals do these classes ususally have--papers or tests? In the one psych course I took 10 years ago I think it was mostly tests.

Also, I was looking for stats in the summer course offerings but couldn't find it. Is it ususally offered from the psych dept. or the math dept.? Is intro stats good enough?

Taking more summer courses sounds like a good idea. Summer courses can actually be more heavy than regular session, as it moves faster.

The paper/test ratio varies based on school, course, and instructor. We can't really help you with that one, sorry.

Stats is usually through math.

Most psych classes don't require you take stats as a pre-requisite. There are actually a number of students who wait to take stats their last year or so of undergrad. And, then screw themselves over because they can't pass it. It's always better to take it earlier than later (in my opinion), but you should be okay taking the bulk of your courses without it. Psych testing or research extensive courses may be the only exception to this.

Take stats over the summer. That and abnormal.
You are going to want a stats grade on your transcript because Psych research is pretty much all stats. They will want to see that.
AND, stats is usually a pre-requisite for research methods. You will want to be in that (at least show it as a work in progress) before you apply in the fall. So if you take stats and abnormal in the summer, you can take research methods and something else in the fall. But I would say you really need stats on there. (So my advisor tells me, anyway.)
