Not taking "future coursework"

I know that the future coursework listed on AMCAS is not binding, but should I notify the schools that I've been accepted at anyways?

I finished all my prerequisites and graduated a few years back. I was going to take one course for "fun", but with all the interviews and job obligations (i'm currently working two jobs), it didn't make sense for me to sign up for it.🤢

N=1 here, but you don't have to if you have fulfilled all your pre-reqs. Schools aren't really judging you on coursework you have not taken unless you failed them or something. Just call up your school if you are really worried.
 
If you have fulfilled all of your pre-requisites for whatever school you will be attending, don't bother. I am 99.9999% sure that the adcom did not think "You know, this guy is a great. We should definitely admit him provided that he take this one class that he doesn't need before he comes here. Otherwise, there is no way he should come to out school."
