Is there a standard estimate of how many applicants schools will accept relative to the number of seats they have? Obviously every school is different but is it fair to assume that if a school can seat 100 then they would accept between 180-220 or so?

Make no assumptions. But large expensive private schools might accept 3-5x their class size where as a small inexpensive state school only accepts as many people as they have seats for assuming that most people will accept their offer. Every adcom knows their history and have their own strategy...
