One School To Start Verification Process

As stated, I submitted my app with only one school just to start the verification process and was thinking I'd add the others when MCAT score was in.

Should I be adding the others now?

Probably wouldn't. First off some, but not all have deadlines. So if you don't know your score it'll be hard to tell whether it's worth applying there,

Second, if you send in a primary and decide you don't want to apply there than you will be a reapplicant there if you decide to wait a year to apply with an mcat retake
