Just out of curiosity...when residency programs send out dates for an interview, do they usually try to interview their top candidates on an earlier date, or a later date so that they are fresh on their minds when it comes to ranking?

First come first serve. If you made it the interview, the outcome will be what determines if you’re a top candidate.
