I have a 3.1 GPA and I see some programs state they require a 3.0 for admissions.

Is that accurate? I thought admissions into OT school was like 3.8?

The minimum requirement for consideration for many schools is 3.0 but that doesn't mean everyone will get in. Many school will have strong applicants with higher stats. It is important to also note strong applicants can exist beyond stats.

GPA is only one portion considered. If you have strong essays and good experiences you shouldn't worry too much about your GPA. Statistics are just statistics. Every grad school places a higher emphasis on different things and it all depends on who is reviewing your application. Don't let statistics prevent you from applying to a program. Most require a minimum of a 3.0 and I've seen as low as a 2.5.

I have posted about this many times. there are schools that only look at your last 60 hours. Western Michigan comes to mind, and there is a list i posted here

Not to mention we have an entire thread devoted to stats and acceptances.

I would do research into specific schools to see how the process occurs. I am currently a second year student that got in with low stats. I did manage to find a school which saw my true potential but other schools could not get over the numbers. You can be great but you still need to outshine your fellow applicants. Hardest part is truly getting in. Knowing now, it would had been wiser for me to only apply to schools that conducted interviews because they are generally more forgiving and can see past the numbers. Stay strong guys and gals!
