My father is disabled. Under employment there was no option for that besides "other" or "unemployed." Should I use my explanation statement to state that my father is on disability and not just unemployed?

Schools won't care whether or not your father is truly unemployed or why. I wouldn't bother, but you can always call VMCAS to ask. If anything, "Other" is the better descriptor for his situation.
