So I know that PCC will do one step of oxidation when added to an alcohol so it will take it to either a ketone or aldehyde depending on whether the alcohol is primary or secondary. What if you add PCC to an aldehyde? Would it oxidize it to carboxylic acid?

Nope, PCC does NOT oxidize aldehydes to Carboxylic Acids. ONLY KMNO4 and tollens reagent can perform that. PCC only oxidizes alcohols NOT ketones or aldehydes.
