While I realize that physiology will definitely be a useful class to have under my belt prior to medical school, is it absolutely necessary to take? In other words, will admissions see not taking it as a red flag or frown upon it in any way?
 
no. there are no "hidden" course requirements. if they don't say outright that they want it, then it's okay not to.
 
I've even heard that some schools prefer student to not have taken overlapping coursework. Not sure why this would be (maybe they are afraid they will be too set n their ways?)
 
Nope. Your basics are general bio, general chem, organic chem, and general physics. Anything else is for specific programs only (ex: Harvard's HST requires Calc 3).
