Possible to ace the MCAT with only these classes?

Biology (2 semesters)
Chemistry (2 semesters)
Physics (2 semesters)
Organic Chemistry (2 semesters)
Biochemistry (1 semester)
Sociology (1 semester)
Psychology (1 semester)

All these courses + 3 months of self-studying over summer. Is this enough, without taking physio, etc, to do well on the 2015 MCAT?

Isn't that what the entire MCAT covers? Physiology, genetics, microbiology only help because they're more in depth than the general biology courses. That list should be, exhaustively unless I'm missing something, the entirety of the MCAT.
 
What bio are you doing? I would definitely take physio as one of your bio.
 
That's more or less what the MCAT covers. Take practice exams, see what subjects are on the exam that you are weak in or didn't cover in your classes, self-study those.

Most likely Bio I and II.

I would add genetics and micro in that list.
