A month ago, I interviewed at a school where I am below their 10th percentile for GPA of accepted students (slightly above their median for MCAT). This school releases their decisions starting late December. I’ve had several new publications since submitting my AMCAS primary. Should I be submitting an update letter to this school now (a month before they possibly make a decision) or wait until I’m possibly waitlisted?

I’d say it’s probably best to hold off on sending an update letter right now. Since decisions aren’t coming until late December, it might be a little early to jump in with an update. Once they start making decisions, though, that’s when you should send it, especially if you’re waitlisted. It’ll show you’re still actively working and progressing, which could help keep you in the game.
