Post Interview, Do Adcoms Look at Your ECs, Essays, etc. again?

I am curious how the process is post-interview. Some schools say don't send updates, so what I have sent in is all I got.

After the interview, I imagine they still look at your gpa/mcat again since that is a fairly quick glance. But, do they also re-evaluate your essays and EC descriptions? Or is mostly interview performance and MCAT/GPA that matter post interview?

Also, does it differ for MMI vs traditional interview? I imagine MMI would put heavier weight on the interview since you're scored at multiple stations.

If there's something not quite right with your app, my Adcom will have the interviewer read aloud the questionable thing at our Adcom meetings. But I read your app BEFORE the interview.
