Pre-Interview events?

How important exactly is it to make all the pre-interview happy hour/pizza party/mixer type things? I'm flying to 7 schools over two weeks, and its virtually impossible to get to ones that start at 5-6 pm the day before the interview.

Holy grilledcheezsus.
I didn't make many of the mixers due to flying across the country; touchdown commonly is 10PM-12AM for me, even with an earlier start. I did make a habit of emailing certain organizations I wanted to meet though to see if they wanted to meet up (a lot of schools include this in their info packet) and wound up meeting half the greeters due to those interactions anyway! 🙂
For all of my schools, the mixers were not part of your interview day and have no bearing on your final decision.

Not that important. All of those events are for you, so that you can know more about the school, meet current students, and shake off some of the nerves before your interview day. It's great if you can attend those events, but don't beat yourself up if you can't. Not all of us have the expenses to fly in a day earlier, or take off an extra day of work, and I didn't attend any of my pre-interview events for those exact reasons. Not to mention it has no bearing on whether or not you will be accepted to or rejected from that particular school.
 
If you can't go, that's fine. If you're present, nothing can really help your application unless some of the students are on the adcom and you're a stalwart. Else, just don't be a dick and you're fine.
 
I'd try to make it but if you don't - no biggie. THey understand you are flying around.
