I am planning to take the OAT in january without calculus 1 and stats. Is it possible to wait on those and take them summer before school starts?

You could! You don't need to have taken those courses for the OAT but you probably need to take them before you start Optometry school.

As far as I know most schools don't allow you to complete pre-reqs the summer before first semester, they have to be done prior during spring semester at the latest.

Maybe it is different for different programs. I would just call the programs you plan to apply to and ask them. They are usually very helpful.
