are most schools really picky about their premed requirements? i never took gen chem or english because i placed out with ap credit... is that a problem?

As long as the courses you got AP credit for appear on your college transcript (i.e. your transcript lists those courses as courses you have credit for), you should be okay for at least one semester of that class at most schools. I think most schools like to see you take the second semester of the year-long sequence though. For Math, some schools will accept AP BC calc for 2 semesters of calc.
Some schools require you to take another semester of Chem even if you got AP credit for one semester, but most don't care. I think most schools want at least 2 semesters of bio.

Maybe.

You can probably get in with English... I applied to schools that asked for 2 English even though I had only taken 1. I listed a philosophy course in lieu. I'm sure you could do the same.

BUT... the chem is a problem. Tested out? I know many schools won't take AP for the required science sets. On the other hand, a lot of schools only specify "inorganic chemistry" with the understanding that this will be filled with most school's Gen Chem set. If you took an actual higher level inorganic set, or even an analytical set, you'll probably be fine.

if they specifically say they require freshman comp, is there any way you can get out of that? my undergraduate school only had a comp class for remedial students. everyone else just took regular english classes. i've taken tons of pretty writing intensive courses, but i've never specifically taken comp and feel like it would probably be a waste of time and money.

If I were you, I would take gen chem. I've had secondary applications that explicitly ask for your get chem grades. I haven't seen the emphasis on english, although there is some mention of it.
