Could someone take a second semester/quarter of English to fulfill their one year of English requirement after they apply? Same goes for other premed requirements. Do medical schools want to see ALL of your premed requirement grades prior to accepting/rejecting you?

Use the search function, but they want all of your prerequisites completed before matriculation. So you can apply while you're still planning to take certain courses in the future.

I would try fulfilling all pre-requisites prior to applying.

In general, it's fine to take prerequisite classes the year that you're applying, as long as you're done with them by the time you matriculate.

Some schools have specific rules, however, so you should check individual websites to make sure. For example, I believe Vanderbilt wants you to finish all your prerequisites by fall term the year before you matriculate.
