Prereqs and taking a year off

Ok so I've come to realize that schools have many different pre-reqs. For example, math, 1-2 semesters, english 1-3 sem., some weird biology reqs (ex. from Oklahoma: Histology, Genetics, Embryology, Cellular Biology or Comparative Anatomy (any of these) - one semester) and humanities etc...

I think I'm going to have a year of english, which is the average I'd say.. and math (stats and calc AP). Should I take these extra english(3rd semester)/math(calc 2)/bio classes before I graduate, or should I wait until I apply and get accepted to a particular school and then satisfy their specific requirements at a community college? I have the year off after I graduate to do whatever...
 
I found the only thing that prevented me from applying to any specific school was not having 2 semesters of English. I had AP credit for one semester which wasn't recognized by the medical school.

I think you'd be able to apply to most every school if you met your general ed requirements and have 8 credits with lab of physics, gen chem, o chem, and biology along with a year of math and English. You can always add "future" classes to your AMCAS if you find schools you really want to apply to that require additional classes.
